  • Total Time: 195 minutes
  • Yield: 4 servings 1x

Ingredients

Scale
  • 1/4 cup kosher salt
  • 1/4 cup brown sugar
  • 8 cups water

Instructions

  1. In a large pot or bowl, mix 1/4 cup kosher salt and 1/4 cup brown sugar into 8 cups of warm water until dissolved.
  2. Let the solution cool if it’s warm to avoid cooking the chicken.
  3. Submerge your chicken in the brine and refrigerate for 2 to 4 hours.
  4. After brining, rinse the chicken off and pat dry before adding your favorite dry rub.
  5. Smoke the chicken until done, allowing it to rest before serving.

Notes

Feel free to add garlic cloves, lemon, or swap sugars for varied flavors. Avoid brining overnight to prevent excessive saltiness.
