Ingredients

  • 2 cups shredded chicken (leftover rotisserie preferred)
  • 8 tostada shells
  • 1 cup BBQ sauce
  • 1 cup shredded cheese (cheddar, Monterey Jack, or Pepper Jack)
  • 1/2 red onion, sliced
  • Cilantro and lime for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Spread tostada shells on a baking sheet lined with foil.
  3. In a bowl, mix shredded chicken with BBQ sauce, ensuring it’s well-coated.
  4. Plop the BBQ chicken onto the tostada shells, sprinkle with shredded cheese, and add red onions if desired.
  5. Bake in the oven for 6-7 minutes, until cheese is melted and everything is warmed through.
  6. Remove from oven, let cool, and garnish with cilantro and lime before serving.

Notes

For extra crunch, bake the shells a couple of minutes before adding toppings. Customize toppings to your liking.
