A customizable Greek Chicken Bowl that is fast, healthy, and perfect for weeknight dinners.

Ingredients

  • 1 lb chicken breasts
  • 3 tbsp olive oil
  • 2 tbsp lemon juice
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • Salt, to taste
  • Black pepper, to taste
  • 1 cup cooked rice (or quinoa, cauliflower rice)
  • 1 cup diced cucumber
  • 1 cup diced tomato
  • 1/2 cup diced red onion
  • 1/4 cup chopped parsley
  • 1/2 cup feta cheese, crumbled (optional)
  • 1/2 cup tzatziki sauce

Instructions

  1. Marinate the chicken in olive oil, lemon juice, garlic, oregano, salt, and pepper for at least 20 minutes.
  2. While the chicken is marinating, combine cucumber, tomato, red onion, parsley, olive oil, lemon juice, salt, and pepper to make the Greek cucumber salad.
  3. Cook the marinated chicken by grilling, baking, or searing until fully cooked.
  4. Assemble the bowls with rice, chicken, cucumber salad, and top with feta cheese and tzatziki sauce.

Notes

Feel free to customize the bowl with your favorite toppings and add-ins. Great for meal prep and can be made dairy-free.
