- 1 lb chicken breasts
- 3 tbsp olive oil
- 2 tbsp lemon juice
- 2 cloves garlic, minced
- 1 tsp dried oregano
- Salt, to taste
- Black pepper, to taste
- 1 cup cooked rice (or quinoa, cauliflower rice)
- 1 cup diced cucumber
- 1 cup diced tomato
- 1/2 cup diced red onion
- 1/4 cup chopped parsley
- 1/2 cup feta cheese, crumbled (optional)
- 1/2 cup tzatziki sauce
Instructions
- Marinate the chicken in olive oil, lemon juice, garlic, oregano, salt, and pepper for at least 20 minutes.
- While the chicken is marinating, combine cucumber, tomato, red onion, parsley, olive oil, lemon juice, salt, and pepper to make the Greek cucumber salad.
- Cook the marinated chicken by grilling, baking, or searing until fully cooked.
- Assemble the bowls with rice, chicken, cucumber salad, and top with feta cheese and tzatziki sauce.
Notes
Feel free to customize the bowl with your favorite toppings and add-ins. Great for meal prep and can be made dairy-free.
