- 6 large ripe peaches (about 2 pounds), sliced

- 1 cup old-fashioned rolled oats
- ¾ cup all-purpose flour
- ½ cup packed light brown sugar
- ½ teaspoon ground cinnamon
- ¼ teaspoon salt
- ½ cup cold unsalted butter, cubed
- ¼ cup chopped pecans (optional)
Instructions
- Preheat your oven to 350°F (175°C). For unripe peaches, place in a paper bag to ripen.
- In a bowl, combine sliced peaches, sugar, lemon juice, cornstarch, vanilla, cinnamon, and salt.
- In another bowl, mix oats, flour, brown sugar, cinnamon, and salt. Add cold butter and mix until crumbly.
- Spread the peach mixture in a baking dish, top with oat topping, and bake for 40-45 minutes until bubbly and golden brown.
- Cool for at least 15 minutes before serving.
Notes
Ideal for serving with vanilla ice cream or Greek yogurt. Can be modified for gluten-free or dairy-free options.
