- 1 dozen hard-boiled eggs
- 1 cup white vinegar (or apple cider vinegar)
- 1 cup water
- 1 tablespoon salt
- 2–3 cloves garlic, smashed
- 1 tablespoon peppercorns
- 1 cup sliced fresh jalapeños (or dried chili flakes)
Instructions
- Hard boil the eggs, peel them, and let them cool.
- In a saucepan, boil together vinegar, water, salt, garlic, peppercorns, and jalapeños.
- Stuff the peeled eggs into a clean jar and add extra hot peppers.
- Pour the warm brine over the eggs until they are completely covered.
- Seal the jar and let it cool at room temperature for an hour.
- Refrigerate the jar and wait at least 3 days for best flavor.
Notes
The longer the eggs sit in the brine, the spicier they become. Can be served with avocado toast, cold potato salad, or as a garnish.
