Zesty Spicy Pickled Eggs

Ingredients

  • 1 dozen hard-boiled eggs
  • 1 cup white vinegar (or apple cider vinegar)
  • 1 cup water
  • 1 tablespoon salt
  • 23 cloves garlic, smashed
  • 1 tablespoon peppercorns
  • 1 cup sliced fresh jalapeños (or dried chili flakes)

Instructions

  1. Hard boil the eggs, peel them, and let them cool.
  2. In a saucepan, boil together vinegar, water, salt, garlic, peppercorns, and jalapeños.
  3. Stuff the peeled eggs into a clean jar and add extra hot peppers.
  4. Pour the warm brine over the eggs until they are completely covered.
  5. Seal the jar and let it cool at room temperature for an hour.
  6. Refrigerate the jar and wait at least 3 days for best flavor.

Notes

The longer the eggs sit in the brine, the spicier they become. Can be served with avocado toast, cold potato salad, or as a garnish.
