- 1 package frozen tater tots
- 1 pound breakfast sausage (mild or hot)
- 6 eggs
- 1 cup cheese (sharp cheddar or your choice)
- 1 cup milk (full fat or low fat)
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 teaspoon garlic powder (optional)
- 1/2 teaspoon paprika (optional)
- Bell peppers or spinach (optional, for added veggies)
Instructions
- Brown the sausage in a skillet, breaking it up as it cooks. Drain excess fat.
- Preheat your oven to 350°F (175°C).
- In a large bowl, whisk together the eggs, milk, salt, pepper, garlic powder, and paprika.
- Stir in part of the cheese and the cooked sausage.
- Pour the mixture into a greased 9×13-inch baking dish.
- Top with the tater tots in a single layer and sprinkle more cheese on top.
- Bake for about 45 minutes until bubbly and golden brown.
- Let cool for 10 minutes, slice, and serve with optional toppings like hot sauce or green onions.
Notes
This casserole can be made ahead of time and kept in the fridge overnight. It also freezes well. Consider adding in your favorite vegetables to customize it.
