A hearty and customizable weeknight casserole that combines the flavors of traditional walking tacos with the ease of a baked dish.

Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 can beans, drained
  • 1 can corn, drained
  • 1 bag Fritos corn chips
  • 2 cups shredded cheese
  • Toppings: shredded lettuce, sour cream, salsa, jalapeños (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, brown the ground beef with taco seasoning.
  3. Add the drained beans and corn to the skillet and mix well.
  4. Transfer the mixture to a casserole dish.
  5. Layer crushed Fritos on top of the meat mixture.
  6. Sprinkle shredded cheese over the Fritos.
  7. Bake in the oven for about 20 minutes, or until bubbly.
  8. Serve with your favorite toppings.

Notes

Customize the casserole with different proteins or chips. Can be made ahead without chips and cheese, adding them before baking.
