Ingredients

  • 2 medium zucchinis, chopped
  • 2 cups cherry tomatoes, halved
  • 12 oz rigatoni pasta
  • 2 cups chicken broth
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika (optional)
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat. Add sliced chicken sausage and cook until browned.
  2. Add chopped zucchini and halved tomatoes, cooking until the tomatoes break down slightly.
  3. Stir in the rigatoni pasta and enough chicken broth to cover the pasta.
  4. Bring to a simmer, stirring occasionally, and cook until the pasta is al dente and has absorbed most of the broth.
  5. Season with salt, pepper, and smoked paprika, if using.
  6. Garnish with fresh basil before serving.

Notes

Feel free to switch up the sausage type and add other vegetables like mushrooms or bell peppers. For a richer flavor, add a splash of cream before serving.
