Instructions
- Preheat your grill over medium heat.
- In a mixing bowl, combine sliced zucchinis, olive oil, chili powder, lime juice, and salt.
- Toss to coat the zucchini evenly.
- Grill the zucchini slices for 3-4 minutes on each side until charred and tender.
- Warm the corn tortillas on the grill for about 30 seconds on each side.
- Assemble the tacos by placing grilled zucchini on a tortilla and topping with diced tomatoes, avocado, red onion, and cilantro.
- Squeeze more lime juice on top before serving.
