Ingredients

- 2 lbs ground beef (80/20)
- 2 big cans crushed tomatoes
- 1 can kidney beans (drained)
- 1 can black beans (or pinto)
- 1 onion, diced
- 3 cloves garlic, smashed and chopped
- 1 bell pepper, chopped
- 2 tbsp chili powder
- 1 tsp cumin
- 1 tsp smoked paprika
- Salt and pepper to taste
- A pinch of sugar
- Optional: A jalapeno or chipotle in adobo
- Optional: Corn or diced carrots for extra veggies
Instructions
- Brown the ground beef in a skillet and drain excess fat.
- Toss the browned beef and all other ingredients into the slow cooker.
- Stir well and set to low for 7-8 hours or high for 4-5 hours.
- Once done, adjust salt and spice to taste.
Notes
Chili can be made in an Instant Pot; brown the beef on sauté mode and set to manual high pressure for 15 minutes.
