A simple, flavorful, and juicy crockpot chicken dish that requires minimal prep and is perfect for busy nights.

Ingredients

  • 2 pounds boneless, skinless chicken breasts (or thighs)
  • 16 ounces jar of salsa verde
  • 1 packet taco seasoning
  • 1 small onion, chopped (optional)
  • 2 cloves garlic, minced

Instructions

  1. Place the chicken in the crockpot without slicing it.
  2. Pour salsa verde over the chicken until well coated.
  3. Sprinkle taco seasoning and add onions and garlic if using.
  4. Cover and cook on LOW for 5-6 hours or HIGH for 3 hours.
  5. Once cooked, shred the chicken in the crockpot using two forks and mix well with the juices.

Notes

Leftovers taste even better the next day. Can be served in tacos, burritos, salads, or over rice and quinoa.
