  • 1 teaspoon vanilla extract
  • 2 cups fresh peaches, diced into 1/4-inch pieces (about 34 medium peaches)
  • 2 cups powdered sugar (for glaze)
  • 34 tablespoons milk or fresh peach juice (for glaze)
  • 1/2 teaspoon vanilla extract (for glaze)

Instructions

  1. Prepare the peaches by washing, pitting, and dicing them into small cubes, then patting them dry.
  2. Mix the dry ingredients in a bowl: flour, sugar, baking powder, salt, cinnamon, and nutmeg.
  3. In another bowl, beat the eggs and stir in milk, melted butter, and vanilla.
  4. Combine wet and dry ingredients gently, then fold in the diced peaches.
  5. Heat vegetable oil in a heavy pot to 350°F (175°C) and fry spoonfuls of batter until golden brown, about 2 minutes per side.
  6. For the glaze, whisk powdered sugar with milk or peach juice and vanilla until smooth.
  7. Dip warm fritters into the glaze and let them cool on a wire rack.
