- 1 teaspoon vanilla extract
- 2 cups fresh peaches, diced into 1/4-inch pieces (about 3–4 medium peaches)
- 2 cups powdered sugar (for glaze)
- 3–4 tablespoons milk or fresh peach juice (for glaze)
- 1/2 teaspoon vanilla extract (for glaze)
Instructions
- Prepare the peaches by washing, pitting, and dicing them into small cubes, then patting them dry.
- Mix the dry ingredients in a bowl: flour, sugar, baking powder, salt, cinnamon, and nutmeg.
- In another bowl, beat the eggs and stir in milk, melted butter, and vanilla.
- Combine wet and dry ingredients gently, then fold in the diced peaches.
- Heat vegetable oil in a heavy pot to 350°F (175°C) and fry spoonfuls of batter until golden brown, about 2 minutes per side.
- For the glaze, whisk powdered sugar with milk or peach juice and vanilla until smooth.
- Dip warm fritters into the glaze and let them cool on a wire rack.
Notes
For healthier options, try baking or air-frying the fritters instead of frying.
