- 2 lbs boneless chicken thighs (or breasts)
- 1 can pineapple with juice
- 2 bell peppers (sliced)
- 1/4 cup soy sauce
- 1/4 cup brown sugar
- 2 cloves garlic (minced)
- 1 tsp ginger (optional)
Instructions
- Trim the chicken and place it in the slow cooker.
- Add the pineapple (with juices) and sliced bell peppers.
- In a small bowl, mix soy sauce, brown sugar, garlic, and ginger.
- Pour the sauce over the chicken and gently toss to combine.
- Set the crockpot on high for 4 hours or low for 6-7 hours.
- Once done, serve over steamed rice.
Notes
For thicker sauce, mix cornstarch with water towards the end of cooking. Serve with sliced green onions on top.
