An easy and quick dinner option that combines all the flavors of a traditional egg roll without the mess. Perfect for busy weeknights!

Ingredients

  • 1 pound ground pork (or chicken, turkey)
  • 1/2 large onion, diced
  • 23 garlic cloves, minced
  • 1 bag (16 ounces) coleslaw mix
  • 12 carrots, shredded
  • 1/4 cup low sodium soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon ground ginger
  • Green onions, sliced for topping
  • Toasted sesame seeds (optional)
  • Sriracha or hot sauce to taste

Instructions

  1. Heat a large pan or skillet over medium-high heat. Add ground pork and cook until browned.
  2. Toss in diced onions and minced garlic, sauté until softened.
  3. Add coleslaw mix and shredded carrots, stirring until wilted.
  4. Pour in soy sauce, ginger, and black pepper; continue stirring.
  5. When veggies are crisp-tender, remove from heat and stir in sesame oil.
  6. Serve in bowls and top with sliced green onions, sesame seeds, and sriracha.

Notes

For a vegetarian option, substitute meat with mushrooms or tofu. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
