Ingredients

- 2 chicken breasts or thighs
- 1 ripe mango, chopped
- 1 cup pineapple chunks (fresh or canned)
- Juice of 1 lime
- 2 tablespoons honey
- 2 tablespoons soy sauce
- 2 cloves garlic, minced
- Pinch of chili flakes (optional)
- Pineapple rings and mango slices for grilling
Instructions
- In a zip-top bag, combine chopped mango, pineapple chunks, lime juice, honey, soy sauce, garlic, and chili flakes.
- Add chicken to the bag, seal it, and marinate in the fridge for at least 30 minutes (or up to overnight).
- Preheat the grill to medium heat.
- Grill chicken for 5-6 minutes on each side until cooked through and juices run clear.
- Grill additional pineapple rings and mango slices for added flavor just before the chicken is done.
Notes
You can also use frozen fruit, just make sure to thaw it first. This recipe can easily be adapted for turkey cutlets or tofu.
