Ingredients

  • Crusty bread (ciabatta or baguette)
  • Fresh mozzarella
  • Ripe tomatoes
  • Basil pesto

Instructions

  1. Cut the crusty bread lengthwise.
  2. Toast both sides in a skillet with a little olive oil.
  3. Spread basil pesto generously on one side of the bread.
  4. Layer thick mozzarella slices on top.
  5. Add juicy tomato rounds and sprinkle with salt and pepper.
  6. Close the sandwich and return it to the pan for 1-2 minutes to warm and melt the cheese.
  7. Let it cool slightly before slicing and serving.

Notes
