A simple and delicious no-bake dessert that mimics the flavors of an éclair with layers of creamy pudding and chocolate frosting.

Ingredients

  • 2 boxes (3.4 oz each) instant vanilla pudding mix
  • 3 cups cold milk
  • 1 tub (8 oz) whipped topping, thawed
  • 1 box graham crackers
  • 1 can chocolate frosting

Instructions

  1. Mix the pudding with cold milk in a large bowl until thick. Fold in the whipped topping until fluffy.
  2. Layer graham crackers to fully cover the bottom of a 9×13 pan.
  3. Spread half of the pudding mixture over the crackers.
  4. Add another layer of graham crackers and top with the remaining pudding mixture.
  5. Add one last layer of graham crackers on top.
  6. Soften the chocolate frosting in the microwave for about 15 seconds, then spread over the top.
  7. Chill in the refrigerator for at least 6 hours, preferably overnight.

Notes

The dessert is best made ahead of time and stored in the fridge. Do not freeze as it affects the texture.
