Ingredients

  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add onions and cook until translucent, about 5 minutes.
  3. Add cabbage, carrots, celery, and bell pepper; sauté for another 5 minutes.
  4. Stir in diced tomatoes and vegetable broth.
  5. Season with garlic powder, salt, and pepper.
  6. Bring to a boil, then reduce heat and let simmer for 30 minutes, until veggies are tender.
  7. Garnish with fresh herbs before serving.

Notes
