- 1 large onion, chopped
- 1 head of cabbage, chopped
- 2 carrots, diced
- 2 stalks of celery, chopped
- 1 bell pepper, chopped
- 1 can diced tomatoes
- 4 cups vegetable broth
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Fresh herbs (parsley or dill) for garnish
Instructions
- In a large pot, heat olive oil over medium heat.
- Add onions and cook until translucent, about 5 minutes.
- Add cabbage, carrots, celery, and bell pepper; sauté for another 5 minutes.
- Stir in diced tomatoes and vegetable broth.
- Season with garlic powder, salt, and pepper.
- Bring to a boil, then reduce heat and let simmer for 30 minutes, until veggies are tender.
- Garnish with fresh herbs before serving.
Notes
Feel free to swap in different vegetables based on your preference or what you have on hand. Adding a dash of hot sauce or chili flakes can give the soup an extra kick!
