Instructions

  1. Marinate the chicken: In a bowl or bag, combine chicken breasts with lime juice, olive oil, garlic, cumin, smoked paprika, salt, and honey. Let marinate for at least 15 minutes.
  2. Heat a grill pan or skillet over medium-high heat. Cook the chicken for 5 minutes on each side, or until golden brown and cooked through.
  3. For the salsa, mix diced avocado, cherry tomatoes, red onion, cilantro, and lime juice in a bowl. Adjust seasoning to taste.
  4. Serve the cooked chicken topped with the avocado salsa.
  5. Squeeze additional lime juice on top, if desired.
