Ingredients
Scale
- 4 boneless chicken breasts
- 1/4 cup lime juice
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1 teaspoon salt
- 1 teaspoon honey (optional)
- 2 ripe avocados, diced
- 1 cup cherry tomatoes, halved
- 1/4 small red onion, chopped
- 1/4 cup fresh cilantro, chopped
- 1 lime, juiced
Instructions
- Marinate the chicken: In a bowl or bag, combine chicken breasts with lime juice, olive oil, garlic, cumin, smoked paprika, salt, and honey. Let marinate for at least 15 minutes.
- Heat a grill pan or skillet over medium-high heat. Cook the chicken for 5 minutes on each side, or until golden brown and cooked through.
- For the salsa, mix diced avocado, cherry tomatoes, red onion, cilantro, and lime juice in a bowl. Adjust seasoning to taste.
- Serve the cooked chicken topped with the avocado salsa.
- Squeeze additional lime juice on top, if desired.
Notes
For the best flavor, include lime zest in the marinade. Pat chicken dry before marinating to avoid excess moisture during cooking.
