Ingredients

Instructions

  1. Prepare the biga by mixing 1/2 cup of flour, 1/4 cup of water, and a pinch of yeast. Let it rest overnight.
  2. In a mixing bowl, combine the remaining flour, water, salt, and the biga from the previous step.
  3. Use a spoon to mix until combined and sticky; do not knead.
  4. Cover the bowl and let the dough rise for about 2 hours, or until puffy.
  5. Scrape the dough onto a floured surface and shape it gently into a rectangle.
  6. Cut the dough into two long pieces and transfer them to a parchment-lined baking sheet.
  7. Allow the dough to rise again until bubbly.
  8. Bake in a preheated oven at 425°F (220°C) for 25-30 minutes until golden brown.
