A cheesy, tangy grilled chicken recipe topped with salsa verde and pepper jack cheese, perfect for busy weeknights.

Ingredients

  • 4 boneless chicken breasts
  • 1 jar of salsa verde
  • 4 slices of pepper jack cheese
  • 1 tablespoon oil
  • Salt and pepper to taste

Instructions

  1. Pound the chicken breasts to an even thickness and season with salt and pepper.
  2. Preheat the grill on medium-high and oil the grill grates.
  3. Place the chicken on the grill and cook without moving for a few minutes to get grill marks.
  4. Flip the chicken and after a few minutes, spoon salsa verde over the top.
  5. Cover with pepper jack cheese slices and wait until cheese is melted and chicken is cooked through.
  6. Remove from grill and let rest for a few minutes before serving.

Notes

For a baked version, cook chicken until almost done and then broil the cheese and salsa verde on top until melted.
