Quick and easy vegan tacos that are flavorful and perfect for weeknight dinners. Load them up with your favorite fillings!

Ingredients

  • Tortillas
  • 1 can black beans or lentils
  • 2 medium sweet potatoes, roasted
  • 1 cup bell peppers, sliced
  • 1 medium onion, sliced
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • Optional: cayenne pepper to taste
  • Fresh toppings: diced tomatoes, avocado, shredded lettuce, cilantro, guacamole
  • Vegan cheese for topping
  • Salsa
  • Lime for squeezing

Instructions

  1. Warm the tortillas in a pan for about 1 minute on each side.
  2. In a skillet, sauté onions, garlic, and bell peppers with a splash of oil until softened.
  3. Add black beans or lentils, and roasted vegetables to the skillet.
  4. Season with cumin, chili powder, smoked paprika, and cayenne if desired. Taste and adjust seasonings as necessary.
  5. Fill the warm tortillas with the sautéed mixture.
  6. Top with fresh ingredients like lettuce, tomatoes, and guacamole as desired.
  7. Serve and enjoy the taco-making fun!

Notes

Keep tortillas and fillings separate when storing leftovers to avoid soggy tortillas. Freeze fillings for easy future meals.
