Ingredients

  • 1/2 head of cabbage, chopped
  • 1 can chickpeas, drained and rinsed
  • 2 carrots, sliced
  • 1 onion, chopped
  • 4 cups vegetable broth
  • 1 teaspoon chili flakes (optional)
  • 1 tablespoon sriracha (optional)
  • 1 teaspoon smoky paprika
  • 1 teaspoon cumin
  • Fresh basil, torn (for garnish)

Instructions

  1. In a large pot, combine the chopped cabbage, chickpeas, carrots, onion, and vegetable broth.
  2. Bring to a boil, then reduce heat and let simmer for 20-25 minutes, until the vegetables are tender.
  3. If desired, add chili flakes, sriracha, smoky paprika, and cumin for flavor.
  4. Remove from heat and top with fresh basil before serving.

Notes

Feel free to swap chickpeas for other beans or add lentils for extra protein. This soup freezes well for future meals.
