- 1 cup cottage cheese (full-fat or low-fat)
- 2 eggs
- 1 cup oat flour (or regular flour)
- 1 teaspoon baking powder
- A pinch of salt
Instructions
- Add cottage cheese, eggs, and oat flour to a blender and blend until smooth.
- Transfer the mixture to a bowl, add baking powder and salt, and mix well.
- Pour the batter onto a lined baking sheet, smoothing it into the desired flatbread shape.
- Bake at 400°F (200°C) for about 20 minutes, or until golden brown.
- Let cool for a couple of minutes before slicing.
Notes
For a crispier flatbread, spread the mixture thinner. It can be stored in the fridge for up to three days or frozen for long-term storage.
