Ingredients

- 1 cup cornmeal
- 1 cup all-purpose flour
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 cup cooked sweet potato, mashed
- 1/2 cup butter, melted
- 2 large eggs
- 1 cup milk or buttermilk
- 1/4 cup honey
Instructions
- Preheat your oven to 400°F (200°C) and grease a baking dish.
- In a large bowl, combine cornmeal, flour, baking powder, baking soda, and salt.
- In another bowl, mix together the mashed sweet potato, melted butter, eggs, milk, and honey.
- Pour the wet ingredients into the dry ingredients and stir just until combined; it’s okay if the batter is lumpy.
- Pour the batter into the prepared baking dish and smooth the top.
- Bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean.
- While it’s baking, melt additional butter and mix with honey for the glaze.
- When the cornbread is done, brush the honey butter on top while it’s still warm.
- Let it cool slightly before cutting and serving.
Notes
For a twist, try adding nuts or spices like cinnamon. Can be made in a muffin tin for easier serving.
