Ingredients

  • 4 cups fresh strawberries, hulled and crushed (about 2 pounds)
  • 2 cups granulated sugar (or 1.5 cups honey for a natural option)
  • 2 tablespoons fresh lemon juice (approximately 1 medium lemon)
  • 3 tablespoons chia seeds
  • 1 teaspoon vanilla extract (optional)
  • Pinch of sea salt

Instructions

  1. Rinse strawberries thoroughly and hull them. Crush the berries with a potato masher.
  2. In a large bowl, mix crushed strawberries with sugar until coated.
  3. Sprinkle chia seeds over the mixture, add lemon juice, vanilla extract, and salt; stir to combine.
  4. Let the mixture rest at room temperature for 30 minutes, stirring occasionally.
  5. Transfer to freezer-safe containers, leaving headspace for expansion. Seal tightly and label with the date.

Notes

For a more complex flavor, replace up to half the strawberries with raspberries. Use only freezer-safe containers to avoid breakage.
