Ingredients
Scale
- 4 cups fresh strawberries, hulled and crushed (about 2 pounds)
- 2 cups granulated sugar (or 1.5 cups honey for a natural option)
- 2 tablespoons fresh lemon juice (approximately 1 medium lemon)
- 3 tablespoons chia seeds
- 1 teaspoon vanilla extract (optional)
- Pinch of sea salt
Instructions
- Rinse strawberries thoroughly and hull them. Crush the berries with a potato masher.
- In a large bowl, mix crushed strawberries with sugar until coated.
- Sprinkle chia seeds over the mixture, add lemon juice, vanilla extract, and salt; stir to combine.
- Let the mixture rest at room temperature for 30 minutes, stirring occasionally.
- Transfer to freezer-safe containers, leaving headspace for expansion. Seal tightly and label with the date.
Notes
For a more complex flavor, replace up to half the strawberries with raspberries. Use only freezer-safe containers to avoid breakage.
