Ingredients

  • 1 cup corn (fresh, canned, or frozen)
  • 1 cup shredded cheddar cheese (or mozzarella, or pepper jack)
  • 1/2 cup all-purpose flour
  • 1 large egg
  • 1/4 cup milk
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • Optional: garlic powder, paprika, chopped green onions, or jalapeño for added flavor

Instructions

  1. In a large bowl, combine corn, cheese, flour, baking powder, and seasoning.
  2. In a separate bowl, beat the egg and milk together, then add to the corn mixture.
  3. Stir until you have a thick batter.
  4. Heat oil in a skillet over medium heat.
  5. Scoop small spoonfuls of batter into the skillet.
  6. Fry until golden brown, about 3 minutes on each side.
  7. Drain on paper towels before serving.

Notes

Let the batter sit in the fridge for 10 minutes before cooking to enhance flavor. Serve with sour cream, ranch, or spicy mayo.
