- 8 oz (225g) soba noodles
- ¼ cup soy sauce
- 2 tablespoons mirin
- 1 cup dashi or chicken stock
- 2 tablespoons toasted sesame oil
- 1 tablespoon rice vinegar
- 2 teaspoons honey or maple syrup
- Green onions for garnish
- Sesame seeds for garnish
- Roasted seaweed for garnish
Instructions
- Boil a large pot of water and cook the soba noodles for 4-5 minutes until tender but slightly firm.
- Rinse noodles under cold water to remove excess starch and stop cooking.
- In a bowl, mix soy sauce, toasted sesame oil, rice vinegar, honey, and garlic to create the sauce.
- Add the drained noodles to a large bowl and pour the sauce over them, mixing well.
- Garnish with green onions, sesame seeds, and your choice of additional toppings.

Soba noodles can be enjoyed hot or cold and are versatile for various garnishes.
