Ingredients

  • 8 oz (225g) soba noodles
  • ¼ cup soy sauce
  • 2 tablespoons mirin
  • 1 cup dashi or chicken stock
  • 2 tablespoons toasted sesame oil
  • 1 tablespoon rice vinegar
  • 2 teaspoons honey or maple syrup
  • Green onions for garnish
  • Sesame seeds for garnish
  • Roasted seaweed for garnish

Instructions

  1. Boil a large pot of water and cook the soba noodles for 4-5 minutes until tender but slightly firm.
  2. Rinse noodles under cold water to remove excess starch and stop cooking.
  3. In a bowl, mix soy sauce, toasted sesame oil, rice vinegar, honey, and garlic to create the sauce.
  4. Add the drained noodles to a large bowl and pour the sauce over them, mixing well.
  5. Garnish with green onions, sesame seeds, and your choice of additional toppings.
