A flavorful Indian curry made with chickpeas in a spicy, tomato-rich sauce.

Ingredients

  • 2 cups chickpeas (canned or dried)
  • 1 large onion, chopped
  • 1 tablespoon vegetable oil
  • 1 tablespoon fresh ginger, minced
  • 2 cloves garlic, minced
  • 1 green chili, chopped (optional)
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1 teaspoon turmeric powder
  • 1 teaspoon garam masala
  • 1 can (14 oz) crushed tomatoes
  • Salt to taste
  • 1 tablespoon lemon juice
  • Water as needed

Instructions

  1. Heat oil in a pan and add chopped onions. Cook until golden brown.
  2. Add ginger, garlic, and green chili; sauté until fragrant.
  3. Stir in cumin, coriander, turmeric, and garam masala.
  4. Add the crushed tomatoes and let simmer until it becomes thick.
  5. Stir in the chickpeas (drained if using canned) and add water as needed for desired consistency.
  6. Salt to taste and let simmer for 10-15 minutes.
  7. Finish with lemon juice and serve hot.

Notes

For added depth, toast the spices before adding them to the oil. Serve with basmati rice or naan.
