- 1 lb ground chicken (or turkey)
- 1 cup panko breadcrumbs
- 1/2 cup Parmesan cheese, grated
- 2 cloves garlic, minced
- 1/2 cup sun-dried tomatoes, chopped
- 1/2 cup chicken broth
- 1/2 cup heavy cream
- 1 tsp Italian seasoning
- 1/4 tsp chili flakes
- 2 tbsp olive oil
- Salt and pepper, to taste
Instructions
- In a large mixing bowl, combine ground chicken, panko breadcrumbs, Parmesan cheese, minced garlic, sun-dried tomatoes, chicken broth, heavy cream, Italian seasoning, chili flakes, salt, and pepper.
- Form the mixture into meatballs, about 1-2 inches in diameter.
- In a large skillet, heat olive oil over medium heat.
- Add the meatballs and cook until browned on all sides, about 5-7 minutes.
- Reduce heat, and pour in the remaining chicken broth and heavy cream. Stir to combine.
- Simmer until the sauce thickens slightly and the meatballs are cooked through, about 10 minutes.
- Serve with crusty bread, pasta, or a simple salad.
Notes
For extra flavor, consider adding a spoonful of pesto or another pinch of chili flakes to the sauce.
