Marry Me Chicken Meatballs

Ingredients

  • 1 lb ground chicken (or turkey)
  • 1 cup panko breadcrumbs
  • 1/2 cup Parmesan cheese, grated
  • 2 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1 tsp Italian seasoning
  • 1/4 tsp chili flakes
  • 2 tbsp olive oil
  • Salt and pepper, to taste

Instructions

  1. In a large mixing bowl, combine ground chicken, panko breadcrumbs, Parmesan cheese, minced garlic, sun-dried tomatoes, chicken broth, heavy cream, Italian seasoning, chili flakes, salt, and pepper.
  2. Form the mixture into meatballs, about 1-2 inches in diameter.
  3. In a large skillet, heat olive oil over medium heat.
  4. Add the meatballs and cook until browned on all sides, about 5-7 minutes.
  5. Reduce heat, and pour in the remaining chicken broth and heavy cream. Stir to combine.
  6. Simmer until the sauce thickens slightly and the meatballs are cooked through, about 10 minutes.
  7. Serve with crusty bread, pasta, or a simple salad.

Notes

For extra flavor, consider adding a spoonful of pesto or another pinch of chili flakes to the sauce.
