Instructions
- In a blender or food processor, blend nectarines until smooth.
- Add Greek yogurt, honey, lemon juice, and vanilla extract. Blend until fully combined and creamy.
- Taste and adjust sweetness if needed.
- Pour the mixture into a freezer-safe container.
- Freeze for 3–4 hours, stirring every 30–45 minutes to prevent large ice crystals.
- Let it sit at room temperature for 5 minutes before scooping and serving.
Notes
- For extra creaminess, use full-fat Greek yogurt.
- Add chopped frozen nectarines or bits of granola when serving for texture.
- Store in an airtight container for up to 2 weeks in the freezer.
