- 3 pounds ripe nectarines, pitted and roughly chopped
- 1 cup brown sugar
- 1/4 cup honey or maple syrup (optional)
- 1 tablespoon fresh lemon juice
- 2 teaspoons ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground allspice
- 1/4 teaspoon ground ginger
- 1/8 teaspoon ground cloves
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
- Wash the nectarines, remove the stems, cut and pit them, then roughly chop.
- Place the nectarines in a large cooker and add brown sugar, honey or maple syrup, and lemon juice, stirring gently.
- Cook uncovered for 1-2 hours, stirring occasionally until the nectarines break down.
- Add spices and stir well; continue cooking uncovered to allow moisture to evaporate.
- When the mixture reduces, use an immersion blender to puree until smooth.
- Cook uncovered, stirring occasionally, until the desired thickness is reached.
Notes
Consider substitutions with yellow peaches or using different sweeteners. Monitor the cooking time closely to prevent scorching.
