Ingredients

  • 3 pounds ripe nectarines, pitted and roughly chopped
  • 1 cup brown sugar
  • 1/4 cup honey or maple syrup (optional)
  • 1 tablespoon fresh lemon juice
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground allspice
  • 1/4 teaspoon ground ginger
  • 1/8 teaspoon ground cloves
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Wash the nectarines, remove the stems, cut and pit them, then roughly chop.
  2. Place the nectarines in a large cooker and add brown sugar, honey or maple syrup, and lemon juice, stirring gently.
  3. Cook uncovered for 1-2 hours, stirring occasionally until the nectarines break down.
  4. Add spices and stir well; continue cooking uncovered to allow moisture to evaporate.
  5. When the mixture reduces, use an immersion blender to puree until smooth.
  6. Cook uncovered, stirring occasionally, until the desired thickness is reached.

Notes

Consider substitutions with yellow peaches or using different sweeteners. Monitor the cooking time closely to prevent scorching.
