Paula Deen’s Peach Cobbler

A Southern classic peach cobbler with a buttery crust and juicy peaches, made with an easy melt-and-pour technique.

  • 1 stick (½ cup) unsalted butter
  • 1 cup all-purpose flour (substitute: gluten-free 1:1 baking flour)
  • 1 cup granulated sugar (substitute: coconut sugar for a caramel note)
  • 1 tablespoon baking powder
  • Pinch of salt
  • 1 cup whole milk (substitute: almond milk or buttermilk for tanginess)
  • 1 teaspoon pure vanilla extract
  • 4 cups fresh peaches, peeled and sliced (about 56 medium peaches)
  • 1 cup granulated sugar (or ¾ cup if peaches are particularly sweet)
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 1 tablespoon lemon juice
  • Optional: 2 tablespoons peach schnapps for enhanced flavor

Instructions

  1. Preheat your oven to 375°F (190°C). Place the stick of butter in a 9×13-inch baking dish and put it in the oven while it’s preheating.
  2. In a medium bowl, combine the sliced peaches, 1 cup sugar, cinnamon, nutmeg, and lemon juice. If using peach schnapps, add it now. Gently toss until the peaches are evenly coated.
  3. In a separate bowl, whisk together flour, 1 cup sugar, baking powder, and salt. Add milk and vanilla extract, stirring just until combined.
  4. Once the butter is completely melted, carefully remove the hot dish. Pour the batter directly over the melted butter. Do not stir!
  5. Spoon the peach mixture evenly over the batter. Do not stir. Bake for 40-45 minutes until golden brown and bubbling around the edges.

Notes

For optimal sweetness, use ripe peaches that yield slightly to pressure. Let the cobbler rest for 15-20 minutes after baking for best results.
