- 1 stick (½ cup) unsalted butter
- 1 cup all-purpose flour (substitute: gluten-free 1:1 baking flour)
- 1 cup granulated sugar (substitute: coconut sugar for a caramel note)
- 1 tablespoon baking powder
- Pinch of salt
- 1 cup whole milk (substitute: almond milk or buttermilk for tanginess)
- 1 teaspoon pure vanilla extract
- 4 cups fresh peaches, peeled and sliced (about 5–6 medium peaches)
- 1 cup granulated sugar (or ¾ cup if peaches are particularly sweet)
- 1 teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
- 1 tablespoon lemon juice
- Optional: 2 tablespoons peach schnapps for enhanced flavor
Instructions
- Preheat your oven to 375°F (190°C). Place the stick of butter in a 9×13-inch baking dish and put it in the oven while it’s preheating.
- In a medium bowl, combine the sliced peaches, 1 cup sugar, cinnamon, nutmeg, and lemon juice. If using peach schnapps, add it now. Gently toss until the peaches are evenly coated.
- In a separate bowl, whisk together flour, 1 cup sugar, baking powder, and salt. Add milk and vanilla extract, stirring just until combined.
- Once the butter is completely melted, carefully remove the hot dish. Pour the batter directly over the melted butter. Do not stir!
- Spoon the peach mixture evenly over the batter. Do not stir. Bake for 40-45 minutes until golden brown and bubbling around the edges.
Notes
For optimal sweetness, use ripe peaches that yield slightly to pressure. Let the cobbler rest for 15-20 minutes after baking for best results.
