- 5 cups fresh peaches, peeled and diced
- ½ cup granulated sugar
- 2 tablespoons cornstarch
- 1 tablespoon lemon juice
- 1 teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
Instructions
- Preheat your oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper.
- In a large bowl, whisk together the flour, sugar, baking powder, and salt. Cut in the cold butter until the mixture resembles coarse crumbs. Stir in the beaten egg until just combined.
- Press two-thirds of the crumb mixture into the prepared pan to form an even bottom crust.
- In a separate bowl, toss peaches with sugar, cornstarch, lemon juice, cinnamon, and nutmeg until evenly coated.
- Pour the peach mixture evenly over the crust. Mix rolled oats into the remaining one-third of the crumble mixture and sprinkle on top.
- Bake for 45-50 minutes until golden brown and bubbling. Cool for at least 2 hours before cutting.
Notes
For healthier options, consider using whole wheat flour, reducing sugar, or substituting coconut oil for butter.
