- 2 ripe pears, sliced
- 1/4 cup crumbled Gorgonzola cheese
- 5 cups mixed greens (spring mix and arugula)
- 1/3 cup walnuts or pecans
- Simple vinaigrette (balsamic, olive oil, honey or maple syrup)
Instructions
- Preheat your oven to 400°F.
- Slice the pears into thick wedges and toss them with olive oil and a sprinkle of salt.
- Spread the pears on a baking sheet and roast for 12-15 minutes until golden.
- In a large bowl, combine the mixed greens, Gorgonzola, and walnuts.
- Once the pears have cooled slightly, layer them over the greens and drizzle with vinaigrette.
- Toss gently or leave composed for extra presentation.
Notes
Best enjoyed fresh, but leftovers can be stored in a container, keeping dressing separate to maintain crispness.
