Ingredients

- 1 pound chicken tenders
- 1 jar pepperoncini peppers (with brine)
- 4 ounces cream cheese
- 1/2 cup heavy cream
- 2 cloves garlic, minced
- 1 small onion, chopped
- 1/2 cup grated parmesan cheese
- 2 tablespoons olive oil
- Salt and cracked pepper to taste
- Italian seasoning (optional)
Instructions
- Heat olive oil in a skillet over medium-high heat.
- Pat dry the chicken tenders and add them to the skillet, browning on both sides.
- Push the chicken to one side and add chopped onion and garlic, cooking until fragrant.
- Add sliced pepperoncini and a splash of brine to the skillet.
- Reduce heat to low and mix in cream cheese until melted, then stir in heavy cream and parmesan until smooth.
- Add chicken back to the skillet, cover, and cook for an additional 5-10 minutes until fully cooked.
- Serve with extra sauce on top.
Notes
For less spice, drain some brine from the pepperoncinis. Leftover rotisserie chicken can be used for a quicker meal. This recipe doubles easily and tastes even better the next day.
