Creamy Pepperoncini Chicken Tender Skillet

Ingredients

  • 1 pound chicken tenders
  • 1 jar pepperoncini peppers (with brine)
  • 4 ounces cream cheese
  • 1/2 cup heavy cream
  • 2 cloves garlic, minced
  • 1 small onion, chopped
  • 1/2 cup grated parmesan cheese
  • 2 tablespoons olive oil
  • Salt and cracked pepper to taste
  • Italian seasoning (optional)

Instructions

  1. Heat olive oil in a skillet over medium-high heat.
  2. Pat dry the chicken tenders and add them to the skillet, browning on both sides.
  3. Push the chicken to one side and add chopped onion and garlic, cooking until fragrant.
  4. Add sliced pepperoncini and a splash of brine to the skillet.
  5. Reduce heat to low and mix in cream cheese until melted, then stir in heavy cream and parmesan until smooth.
  6. Add chicken back to the skillet, cover, and cook for an additional 5-10 minutes until fully cooked.
  7. Serve with extra sauce on top.

Notes

For less spice, drain some brine from the pepperoncinis. Leftover rotisserie chicken can be used for a quicker meal. This recipe doubles easily and tastes even better the next day.
