- 1 pound ground chicken
- 1 egg
- 1 cup breadcrumbs (plain or panko)
- 1/2 cup grated Parmesan cheese
- 1/4 cup milk
- 2 tablespoons fresh parsley or basil (or 1 tablespoon dried herbs)
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Chili flakes (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, mix the ground chicken, egg, breadcrumbs, herbs, Parmesan, and milk until combined. Do not over-mix.
- Using a tablespoon or ice cream scoop, portion out the meatballs and place them on a lined baking sheet.
- Bake for about 18 minutes or until cooked through. Check with a meat thermometer (165°F or 74°C).
- Serve as is or broil with marinara for an extra two minutes for a saucy top.
Notes
These meatballs freeze well. Let them cool and flash freeze on a baking sheet before transferring to a zip-top bag for future meals.
