- 4 chicken breasts
- 2 large onions, thinly sliced
- 2 tablespoons butter
- 1 cup beef broth
- 1 cup shredded provolone cheese
- 1 cup shredded mozzarella cheese
- Salt and pepper to taste
- Optional: garlic powder, thyme, or oregano
Instructions
- Preheat the oven to 400°F (200°C).
- Trim and season chicken breasts with salt, pepper, and garlic powder.
- In a large skillet, melt butter and caramelize sliced onions over medium heat for about 20 minutes until golden and tender.
- Add beef broth to the skillet and allow the onions to soak it up.
- Place the chicken in a baking dish, top with caramelized onions, pour remaining broth over, and sprinkle with provolone and mozzarella cheese.
- Bake until bubbly and chicken is cooked through, about 25-30 minutes.
- Serve hot, optionally topping with crispy fried onions.
