Ingredients

- 1 cup old-fashioned oats
- 1 large egg
- ½ cup grated cheese (cheddar or feta)
- ½ cup milk
- 1 small grated zucchini (squeezed of water)
- 1 minced garlic clove
- 1–2 tbsp chopped green onions
- Pinch of salt
- Pepper to taste
- Little dash of chili powder (optional)
Instructions
- Combine the oats and milk in a bowl and let soak for 10 minutes.
- Add grated cheese, zucchini, garlic, green onions, egg, salt, and pepper. Stir until sticky.
- Form small rounds or patties from the mixture.
- Preheat a nonstick pan with a little oil and cook each fritter for 3-4 minutes on each side until golden brown.
- Serve with yogurt, salsa, or as a snack.
Notes
You can customize these fritters by adding cooked veggies or using a flax ‘egg’ for a vegan version. They are also freezer-friendly.
