Ingredients

  • 1 Ribeye steak (at least 1 inch thick)
  • Salt
  • Black pepper
  • Butter (optional)
  • 1 clove garlic (optional)

Instructions

  1. Remove the steak from the fridge 30 minutes before cooking.
  2. Pat the steak dry with paper towels and season generously with salt.
  3. Preheat a cast-iron skillet over high heat until it’s almost smoking.
  4. Season the steak with black pepper just before placing it in the skillet.
  5. Add the steak to the skillet and let it sear without moving it for a couple of minutes to form a crust.
  6. If desired, add a knob of butter and smashed garlic to the skillet for extra flavor.
  7. Flip the steak and cook to your desired doneness, using a meat thermometer if necessary.
  8. Remove the steak from the skillet and let it rest for 5 minutes before slicing.
