  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1/4 teaspoon cinnamon
  • 3/4 cup all-purpose flour
  • 1/2 cup brown sugar, packed
  • 1/4 cup rolled oats
  • 1/4 cup chopped almonds or walnuts (optional)
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 6 tablespoons cold unsalted butter, cubed

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking pan.
  2. Make the cherry filling: Combine cherries, sugar, cornstarch, lemon juice, and cinnamon in a saucepan. Cook over medium heat until thickened, about 5-7 minutes.
  3. Prepare cake batter: In a large bowl, whisk together flour, sugar, baking powder, and salt. In another bowl, beat the eggs, then mix in milk, melted butter, and extracts. Combine wet and dry ingredients, mixing until just combined.
  4. Assemble the cobbler topping: Combine flour, brown sugar, oats, nuts (if using), cinnamon, and salt in a bowl. Work cold butter into dry ingredients until crumbly.
  5. Layer and bake: Pour butter into the prepared pan. Spoon cherry filling over batter, leaving a 1/2-inch border. Sprinkle cobbler topping over cherries. Bake for 50-55 minutes or until a toothpick comes out clean.
  6. Cool and serve: Allow to cool in the pan for 15-20 minutes before serving.

Notes

For a lower glycemic option, substitute granulated sugar with coconut sugar. To make it dairy-free, use coconut oil and plant-based milk.
