Steak and Cheese Quesadillas

Quick and satisfying steak and cheese quesadillas that use up leftovers and are perfect for a late-night snack.

Ingredients

  • 2 cups cooked steak, thinly sliced
  • 1 large onion, sliced
  • 1 large bell pepper, sliced
  • 4 large flour tortillas
  • 2 cups shredded cheese (Monterey Jack, cheddar, or pepper jack)
  • Butter or cooking spray for the pan

Instructions

  1. In a pan, sear the steak until cooked to your liking, then let cool and slice thinly.
  2. If desired, sauté the onions and peppers in the same pan.
  3. Place a tortilla in the pan and layer half with cheese, then add the steak, sprinkle more cheese on top, and fold the tortilla over.
  4. Toast each side for 3-4 minutes until golden and the cheese is melted.
  5. Remove from the pan, let cool slightly, and slice into wedges.
  6. Serve with salsa, guacamole, and other desired toppings.

Notes

For added flavor, include jalapeños or different types of cheese. Allow steak to rest before slicing to keep juices intact.
