Instructions
- Prepare Your Peaches: Bring a large pot of water to boil and cut a small ‘X’ at the bottom of each peach. Submerge peaches in boiling water for 30 seconds, then transfer to an ice bath. Peel and slice peaches into wedges.
- Create the Fruit Base: In a large bowl, mix sliced peaches with sugars, flour, cinnamon, nutmeg, lemon juice, and vanilla. Transfer to a baking dish.
- Prepare the Cobbler Topping: Preheat oven to 375°F. Mix flour, sugars, baking powder, and salt in a bowl. Cut in cold butter until mixture resembles coarse crumbs.
- Assemble and Bake: Stir boiling water into topping mixture. Drop spoonfuls over peach filling. Bake for 50-55 minutes until topping is golden and filling is bubbling.
- Cool and Serve: Let cobbler cool for at least 30 minutes before serving.
Notes
For best results, use ripe peaches and avoid overmixing the topping.
