Creme Brûlée

A classic French dessert, creme brûlée features a smooth custard base topped with a crunchy caramelized sugar crust. Experiment with different sugars to find your perfect texture and flavor.

Ingredients

  • 4 large egg yolks
  • 2 cups heavy cream
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Additional granulated sugar for caramelizing

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. In a bowl, whisk together the egg yolks, sugar, and vanilla until well combined.
  3. In a saucepan, heat the heavy cream and salt over medium heat until it just begins to simmer. Remove from heat.
  4. Slowly add the hot cream to the egg mixture, whisking constantly to prevent curdling.
  5. Strain the mixture through a fine sieve into a measuring cup.
  6. Pour the mixture into ramekins and place them in a baking dish.
  7. Fill the baking dish with boiling water halfway up the sides of the ramekins.
  8. Bake for about 30-35 minutes or until the edges are set but the centers are still slightly jiggly.
  9. Remove from the oven and let cool, then refrigerate for at least 2 hours.
  10. Before serving, sprinkle a thin layer of sugar on top of each custard and use a kitchen torch to caramelize the sugar until golden brown.
  11. Let sit for a minute before serving for the perfect crack!

Notes

For a perfect crust, it’s important to use an even layer of sugar and caramelize it evenly. Avoid brown sugar as it tends to burn.
