- 4 large egg yolks
- 2 cups heavy cream
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- Pinch of salt
- Additional granulated sugar for caramelizing
Instructions
- Preheat your oven to 325°F (163°C).
- In a bowl, whisk together the egg yolks, sugar, and vanilla until well combined.
- In a saucepan, heat the heavy cream and salt over medium heat until it just begins to simmer. Remove from heat.
- Slowly add the hot cream to the egg mixture, whisking constantly to prevent curdling.
- Strain the mixture through a fine sieve into a measuring cup.
- Pour the mixture into ramekins and place them in a baking dish.
- Fill the baking dish with boiling water halfway up the sides of the ramekins.
- Bake for about 30-35 minutes or until the edges are set but the centers are still slightly jiggly.
- Remove from the oven and let cool, then refrigerate for at least 2 hours.
- Before serving, sprinkle a thin layer of sugar on top of each custard and use a kitchen torch to caramelize the sugar until golden brown.
- Let sit for a minute before serving for the perfect crack!
Notes
For a perfect crust, it’s important to use an even layer of sugar and caramelize it evenly. Avoid brown sugar as it tends to burn.
