- 8 ounces semisweet chocolate chips, melted

- 3 large eggs
- 2 tablespoons unsweetened cocoa powder
- 1/2 cup heavy cream
- 4 ounces bittersweet chocolate, chopped
Instructions
- Preheat your oven to 325°F (160°C).
- Mix cookie crumbs and melted butter, then press the mixture into a springform pan to form the crust. Bake for 10 minutes and let cool.
- In a mixing bowl, beat cream cheese until fluffy. Add sugar, melted chocolate, vanilla, and cocoa powder. Mix well.
- Add eggs, one at a time, mixing until smooth, but avoid overmixing.
- Pour the cheesecake batter over the cooled crust and bake for about 55 minutes.
- Let the cheesecake cool properly before preparing the ganache.
- Heat heavy cream until it just begins to bubble, then pour it over the chopped chocolate. Stir until glossy.
- Pour the ganache over the cooled cheesecake and let it set before serving.
Notes
Let the cheesecake cool for at least 2 hours before adding ganache; overnight cooling enhances flavor. Serve slices at room temperature for best texture.
