Instructions
- Preheat the oven to 400°F (200°C).
- Toss zucchini and peppers with olive oil, salt, and pepper on a baking tray.
- Roast vegetables in the oven until golden on the edges, about 15-20 minutes.
- In a bowl, mix cream, lemon juice, lemon zest, salt, pepper, and garlic.
- Spread roasted vegetables in a baking dish, pour the creamy lemon sauce over them, and top with mozzarella.
- Bake until cheese is bubbly and golden, approximately 20 minutes.
- Let cool for a minute before serving.
